Azabu 10 - Short Documentary

Born in Milan, twenty five year-old Andrea Arcieri is a third-generation fish restaurateur. Introduced to the culinary world through the Mediterranean cooking skills of his father Gianni, proprietor of restaurant San Glicerio, Arcieri grew up immersed in fish gastronomy.

Inspired by his upbringing, Arcieri studied in Japan where he dedicated himself to the intricate art of sushi, learning the historic Tokyo Edomae style of sushi. His innovative technique blends his passion for traditional sushi and a modern twist adapted for western taste buds, and he has worked across Europe.

After four years in London as a Head Sushi Chef, Arcieri now returns to his roots in Puglia to launch Azabu 10 this summer as a pop-up, combining his past experience with a zeal for the local produce of Monopoli.
